I recently overheard a conversation in which two people were talking
about how to cook ribs. To be more to the point they were discussing how
to BBQ pork ribs. This is a subject I'm always interested in as I know
from experience that many people find ribs difficult to cook on the
grill. Most people can cook ribs but they struggle getting them to turn
out like they get them in a restaurant.
Getting back to the
conversation, one of them, I'll call him John for clarity, said that he
rarely made ribs on the barbecue anymore as they always come out fairly
dry and usually a little burnt. This they discussed could probably be
solved by boiling the ribs first for a while before putting them on the
grill.
I know that this is often recommended, even by TV chefs,
but in my opinion boiling the ribs takes out a lot of the flavor, which
is left in the boiling water that's usually thrown away. You do end up
with more moist ribs, and you can put some flavour back into them by
adding a barbecue sauce, but this isn't the method of cooking for me.
I'm
all for using barbecue sauce and John's companion was all for it as
well. He suggested that John buys his ribs already packaged in sauce and
named a well know supermarket. All you need to do then is to grill it
on your BBQ for a few minutes each side he said.
I don't really
have a problem with buying ribs covered with sauce from a shop. However I
only buy these if I really need to, and I don't grill them over direct
heat only.
In my opinion ribs should be flavoursome, moist, and
fall of the bone; perfection. Amazingly if you follow a simple five step
process you can't fall to get ribs exactly like that. You will however
need a grill with a lid, like a kettle barbecue.
You do need a
little preparation prior to cooking your ribs. You'll need to set-up
your grill for indirect cooking. In the case of a charcoal barbecue put
all your coals on one side of the grill and none on the other side.
